Michigan butcher to slice steaks at national competition

MUSKEGON, Mich. (AP) - A Muskegon butcher will test his meat-cutting skills in a national competition.

The Muskegon Chronicle reports that Juan Calderon works at Texas Roadhouse in Muskegon. He will compete against more than 100 other professionals next month. He is one of three butchers from Michigan who will compete at The Ice Factory in Kissimmee, Florida, on March 8 and 9.

The 37-year-old qualified for the nationals by winning a regional competition in Detroit. The nationals begin with three semifinal rounds on March 8. Meat cutters have 90 minutes to cut a variety of meats.

The top 30 advance before the field is narrowed to the final 10. The winner is named Texas Roadhouse Meat Cutter of the Year and receives $20,000 in Miami on April 10.
